My Favorite Waffle Recipe
I don't make waffles often, as I'm not much of a breakfast person. When I do every few months, it's this recipe from Jessica in the Kitchen. I've been using this recipe for a couple years. It definitely goes in The Vault - the tag I will make for posts about my tried and true favorite recipes.
It's so versatile, I've played with the flavorings and toppings and it just works for everything I've thrown at it so far. It's super easy with really accessible ingredients - no JustEgg or concocting eggs from flax seed and apple sauce. Lots of times I will make it when I have guests over. When I used to drink it worked especially well as a pick-me-up to buffer the effects of a hangover.
Today I made it with fresh honeycrisp apples and crunchy pecan butter from the Apple Festival I mentioned in the last post. And cinnamon and maple syrup of course! I love real maple syrup. The pecan butter is phenomenal and I was probably raving about it for an hour last night when I used it as a dip for apple slices.
My husband was feeling a bit tired today since we got our COVID booster shots yesterday, so I offered to make breakfast to cheer him up since I'm not feeling negative effects.
This recipe makes about five or six waffles in my big Belgian waffle maker (probably one of my favorite kitchen gadgets because it just works like a charm).
Below is a time I added strawberry extract and food coloring and topped it with juicy local strawberries and vegan whipped cream. The whipped cream was a magical addition. Like I said, so versatile!
