Apple Cider Doughnuts - Recipe Review

Apples are a fabulous fall favorite. They're so versatile it's no surprise they end up in doughnuts. 

I've had this Apple cider doughnut recipe from Connoisseurus Veg on my "to try" list for a while, and got cider from the Apple Festival with it in mind. 

The simplicity of this recipe was a relief because I've been dehydrating peppers and spices and grinding them up to create a homemade Thai spice powder and learning how to use the grill. For the doughnuts put the dry ingredients in a bowl, measure the wet ingredients, combine and mix, spoon into donuts pans, bake, and coat with cinnamon sugar. Super simple and basically one bowl! They came together so quickly without any fuss. It was my first time baking doughnuts so I am extra glad that this recipe seems to be foolproof. 

I mean, look how beautiful they turned out for a first time baking doughnuts!! 


The flavor is downright delicious and they are SO soft and fluffy. They grow up so nice and tall it was satisfying to watch them rise in their short thirteen minute baking time. They do crumble somewhat easily compared to store bought doughnuts, and the outsides aren't stiff enough to keep them in one piece, but I think perhaps maybe baked doughnuts are more like that? They're kinda cakey/muffiny in texture. My husband says he wishes they were fried because it's basically a fun shaped muffin rather than what he thinks of as a doughnut. But the flavor is enough where I can overlook a more cakey style of doughnut and add it to The Vault. 

I will definitely try out more doughnut recipes, especially ones from Connoisseurus Veg given the success of this one. The doughnuts kept out on the counter without getting stale for almost a full day before I couldn't resist the temptation and ate the last one. I think the flavor was even better after sitting for a while too. Next time I may experiment with increasing the cook time or being more generous with brushing melted vegan butter on them before coating in cinnamon sugar to get the outside to have more firmness.
